Add DeepOptionalAndUndefined type for improved schema handling

This replaces the Partial<> with DeepOptionalAndUndefined<> type to allow deeper control of optional and undefined properties within schemas. Updated affected interfaces, types, and internal logic to incorporate this change. Before - config couldn't be assigned with values that can be undefined, which makes sense for i.e. process.env.
