Update NeoForge to 26.3 and keybinds

This updates the mod to NeoForge 26.3 and the matching ModDev/Gradle toolchain, including the additional plugin mirror repository for dependency resolution. It also adapts the client key bindings to the current NeoForge input API (Keyboard/KEY_* and PRESS), and refreshes the README/version metadata to reflect the new target version.

What's new

• Added an editable chat mode: hold Shift and press Y while hovering an item to close the inventory and insert [Item Name] into the chat input.
• Added a separate configurable key binding for editable item insertion. The existing Shift + T quick-send mode is unchanged.
• Editable messages preserve the item rarity color, stack count, and hover tooltip after sending.
• Editable items can be sent privately with /msg, /tell, or /w.
• Fixed the insert key character being appended to the opened chat input.
