How to proceed to remove all cables (patchcords) between two devices quickly ? To avoid to go on each cable and remove it manually

The simplest approach in NetBox is to open Connections > Cables, filter the list by the desired device, select the relevant cables, and use the bulk delete action.

For a reusable or more automated solution, you could create a custom script with an ObjectVar for selecting the device. The script could then identify and delete all connected cables. Since this is a destructive operation, please review the custom scripts documentation carefully (particularly the use of the clean() method) and test the script with Commit changes disabled before running it for real.
