Don't show completed To-Do list items as crossed-out / struck through

Is your feature request related to a problem? Please describe.
Checked To-Do list items are struck through plus greyed out, therefore pretty hard to read. In many cases it is still important information to see which tasks have been completed.

Describe the solution you'd like
Please change the style from "strike through + greyed out" to just checked and maybe "slightly greyed out", so the items are easier to read. This should be at least configurable.

Describe alternatives you've considered
I don't see alternatives, as this view style is consistent in To-Do lists throughout Nextcloud.

We had numerous reports about this in the past (#6559, #3689, #886, nextcloud/deck#5033 at least). Also, e.g. in Talk checked todo list items are not crossed out either. I agree that we should change this in Text as well.

So we keep the maxcontrast text color for checked items but remove strike-through styling, agreed?

I also opened basically the same request in the tasks repo.

I personally think it would be very nice to change the style for better reading and to make it uniform across all apps.

This could be an Accessibility thing aswell, though I'm not an expert on that.
