Standardize license on CC BY-NC-SA 4.0

This PR fixes a long-standing license inconsistency in the repository and standardizes on CC BY-NC-SA 4.0 (Attribution-NonCommercial-ShareAlike).

To be totally clear:

You are free to:

• Share — copy and redistribute the material in any medium or format
• Adapt — remix, transform, and build upon the material

Under the following terms:

• Attribution — You must give appropriate credit, provide a link to the license, and indicate if changes were made. You may do so in any reasonable manner, but not in any way that suggests the licensor endorses you or your use.
• NonCommercial — You may not use the material for commercial purposes.
• ShareAlike — If you remix, transform, or build upon the material, you must distribute your contributions under the same license as the original.
• No additional restrictions — You may not apply legal terms or technological measures that legally restrict others from doing anything the license permits.

I did a bit of digging in the git history to try to work out how we got here:

• PR Bringing Staging inline with Master #81 (June 2022): Chris Wyatt created LICENSE.txt with CC BY-NC-SA 4.0. In the same PR, Paolo added a Copyright section to README.md referencing CC BY-NC-ND 4.0. This introduced the original inconsistency.
• PR Convert to markdown + mkdocs #127 (Feb 1, 2023): I converted the training material to MkDocs. Created docs/index.md which copied the CC BY-NC-ND reference from the README.md, propagating the error.
• PR Clean up repo readme, licence stuff #144 (Feb 3, 2023): I cleaned up license files. Deleted LICENSE.txt, created LICENSE.md with SA title but ND links/badge, and added cc_by-nc-nd.svg. This cemented both versions into the license file itself.
• PR Updates CC license to CC BY #693 (Nov 5, 2025): Marcel changed the license to plain CC BY (removed NC and SA/ND restrictions).
• PR Revert "Updates CC license to CC BY (#693)" #695 (Nov 10, 2025): Marcel reverted PR Updates CC license to CC BY #693, returning to the broken SA/ND mixed state.

As far as I can tell, the intention has always been, and continues to be, to use CC BY-NC-SA 4.0.

I concur with your recap. For the record, Marcel's PR was an error on my part, I misunderstood some history from before I joined.
