User select form types fix

This PR fixes an issue where the events endpoints were no longer populating the user fields for the User select component. It also removes the hidden field type.

Testing Instructions:

1. Create a form that uses the User select and the multi user select fields
2. Create an observation using that form and verify the fields work as expected.
