Correct product name on container deployments

- Installations set up in English now actually run as Wintertrace. Container deployments (Docker/Coolify) never run the web installer, and the brand was seeded as "Schneespur" regardless of the configured language — so an English installation showed the German product name everywhere: interface, PWA and outgoing email. The product name is now derived from the installation language during setup. Existing installations keep the name they have; it can be changed in the settings (see below).
- Outgoing email no longer goes out under the wrong product name. With no sender name configured, mail now uses the installed product name instead of falling back to a fixed build constant. A sender name entered in the email settings still takes precedence.

- The product name is now a setting. Betrieb & Standort → Produktname lets an operator switch between Schneespur and Wintertrace at any time. It affects the interface, the PWA (name and home-screen title) and the email sender name.
