docs: align settings documentation with current dashboard UI - #748

Updated `docs-web/user/dashboard/settings.md` to match the current category list from `SettingsCategoryRail.tsx`, clarified that sprint scope settings are sparse overrides via the live modal, and documented the new Provider instance cards and Terminal login UI. - Replaced old categories with 01-10 numbered list. - Fixed sprint scope explanation. - Added Provider instances section mentioning Terminal login and Auth modes. - Fixed `AI providers` to `Integrations` in external settings hints section.
