fix(deps)!: drop the fsspec pin and require datasets 5 (#27)
crane never uses fsspec itself, and the fsspec<=2023.9.2 pin dated from
the first commit. It held every project depending on crane to a 2023
fsspec, which rules out anything that needs a newer one, such as current
dvc. fsspec is now left to datasets, which bounds it itself.
Breaking: datasets 5 is now required (was >= 4). The test building an
empty IterableDataset passed a list to from_generator, which datasets 5
rejects; it now passes a generator function. The suite passes on datasets
5.1.0 with fsspec 2026.7.0.
