Knative: Mirror storage-migration-images for 1.5, 1.6 and 1.7

• Upgrade tests are failing due to Bump Serving to v1.5 openshift-knative/serverless-operator#1732 (comment).
• When we run upgrade tests we need to use quay check here.
• Similar to Knative: Mirror storage-migration-images for 1.3 and 1.4 #29300

@skonto: Updated the image-mirror-mappings configmap in namespace ci at cluster app.ci using the following files:

• key mapping_knative_v1_5_quay using file core-services/image-mirroring/knative/mapping_knative_v1_5_quay
• key mapping_knative_v1_6_quay using file core-services/image-mirroring/knative/mapping_knative_v1_6_quay
• key mapping_knative_v1_7_quay using file core-services/image-mirroring/knative/mapping_knative_v1_7_quay
