mhcflurry 2.2.0 supports numpy 2.x, so the cap is no longer needed. mhctools itself only uses basic numpy APIs compatible with both 1.x and 2.x. Co-Authored-By: Claude Opus 4.6 (1M context) <noreply@anthropic.com>

Drop the numpy<2.0 upper bound now that mhcflurry 2.2.0 supports numpy 2.x. Bumps version to 2.1.0.
