Answer: The DB.default folder is located inside of the gem-selektor.app (gems3.app in 2024 and earlier versions of GEMS).
This is a folder usually located in the main /Applications folder or in the user's folder ~/GEMS, depending on where the user has put gem-selektor.app during the installation. In Finder, right-click on the gem-selektor.app and choose "Show package contents". Dive into "Contents" then into "Resources" and then into "DB.default" folder. Put unzipped Cemdata files in there. Then bail out and start GEM-Selektor again. The Cemdata database parts should now be visible in the New Project wizard.
