Kratos quickstart documentation needs review – several commands and flows are outdated

Describe the bug

I'm following the quickstart guide at https://www.ory.com/docs/kratos/quickstart and found several issues indicating it's out of sync with the current codebase.

• The guide uses docker-compose (with a dash), but modern Docker requires docker compose (no dash).
• The MailSlurper authorization flow is broken; the codes generated are rejected by the UI as invalid or outdated.
• The actual UI differs from the screenshots in the docs.
• Probably some more issues.

These inconsistencies could be discouraging teams from adopting Ory. I'd appreciate it if the documentation team could review and revise the quickstart guide.

It would also be valuable to audit other documentation that newcomers and decision-makers typically encounter first.

Just follow the instructions and compare with the expected results.
