No V3 examples for HTTP consumer/provider #757

Prerequisites

pact-python. - I have read the console error message carefully (if applicable).
Description
The examples (stored in examples/) include both a HTTP consumer and provider for V2; however, there are no counterparts of these examples using the newer pact.v3 module.
The existing examples should be adapt to make use and showcase the new pact.v3, to also facilitate the transition to Pact Python V3 when it is eventually released.
