fix(ui): make app header breadcrumbs responsive on small screens

Collapses deeply nested app-header breadcrumbs based on available space instead of clipping or overflowing the header.

When they no longer fit, the middle items collapse into an indented … popup while the root and current items stay visible. The current breadcrumb ellipsizes as the header narrows.

Also fixes the current crumb's ellipsis vanishing on tap: selecting the text scrolled the overflow: hidden element. .step-nav is now user-select: none.
