feat: preserve upload crop metadata

What changed

• persist crop rectangles on upload documents alongside focal-point metadata
• add a cropMode option that keeps existing transform behavior by default and supports preserving original image bytes
• restore saved crop rectangles in the admin editor only for preserve-mode collections

Why

External image processors need both the original uploaded image and the saved crop rectangle to apply crops at delivery time and support reversible editing after a document is reloaded. Existing Payload installations should continue transforming uploaded files as before.

• pnpm test:unit packages/ui/src/utilities/getInitialCrop.spec.ts — 4 passed
