test(mobile): remove mocked UUID shape assertions

The command-metadata tests replace Expo randomUUID with the host's crypto.randomUUID, then check UUID syntax and an ISO timestamp prefix. They do not exercise command delivery or persistence.

Delete only that two-test file. Keep production metadata generation and all callers unchanged; retain the outbox behavior suite.

Focused metadata/outbox tests: 44 before; the retained outbox suite passes all 42 after. Mobile package typecheck, targeted lint/format checks on the retained files, and git diff --check pass.
