Add service ignore feature, validation checks, and improve detection

Features:
- Add ability to ignore individual services via `preflight ignore`
- List all services in config with validation checks
- Skip debug statements in documentation code examples

Improvements:
- Fix service detection for monorepos and improve PostHog patterns
- Remove cookie consent config (now auto-detected)
