The easiest way to setup the new 9.0.0 client is to use the new builder, as explained in the new docs:

);

Otherwise to keep using the old builder and the legacy RestClient, the elasticsearch-rest-client dependency has to be added to the project:

Bumping the elasticsearch-server.version to 9.0.0 will fix the failing elasticsearch-java-client tests (this elasticsearch-java-client sends the compatible-with version in the headers and if we use 9 java client it will be failing on a 8.x server).

with that said, I'm not sure if we should bump this before the Search release is available with 9.0 compatibility included ...
(adding it here hibernate/hibernate-search#4573 will be a part of Search 8.0)

There is a 8.17.5 out as well, if we don't go with the 9 upgrade right now, I can open a PR for a 8.17 instead.
