add Dialog overflow theme override

Describe the bug
Dropdowns in dialogs don't always work because the drawer paper element has overflow hidden.

Possible Solution
Add to the overrides section of defaultTheme.js
MuiDialog: { paper: { overflowY: "visible" } }
