ci: publish only the job fat jars; fix analytics config path

- release.yml: collect only the 4 job shadow jars instead of find-ing every
  build/libs jar, which pulled in all of cassandra-analytics' internal artifacts.
- build-cassandra-analytics: read cassandra-analytics-source.properties from the
  repo root (was the old spark/ subdirectory path).
