Auto-publish to MCP Registry on release

- Extend publish.yml to install mcp-publisher, auth via github-oidc,
  and publish server.json after the PyPI upload succeeds
- Sync pyproject.toml and server.json versions to the release tag so
  releases work by just tagging vX.Y.Z
- Soften README wording about cronometer-mcp's GWT-RPC approach
