Follow-ups to the 1.4.0 Matter/Bacon (bacon_rac) support (#159), addressing
issues surfaced in #160 and #162.

Observability (unblocks diagnosing bacon_rac devices):

diagnostics: dump the raw MQTT shadow (reported/desired); previously bacon
devices showed misleading empty standard_functions lists. None for non-bacon.
new get_shadow_service (response-only) returning a bacon_rac device's cached
reported/desired — get_custom_path_service is pointt/REST-only and can't
reach these devices.
