smith-services bin stubs fail on macOS global install

The wrapper scripts in @sibyllinesoft/smith-services used $(dirname "$0") to locate the platform-specific binary package. When installed globally, npm creates a symlink from $PREFIX/bin/smith-chat-daemon to the package — but dirname "$0" resolves to the symlink's directory (/usr/local/bin etc.), not the actual script location inside the package. This made the relative ../../ path to the platform package resolve to nonsense.

Fix: Resolve symlinks via a readlink loop before computing the script directory. Also checks node_modules/ nested inside the package as a fallback for non-hoisted optional dependencies.

Affects all 12 bin stubs: smith-chat-daemon, smith-admission, and all gateway binaries.
