Fix release: compose.sh works again. The WIT interfaces have not changed since 0.7.1. Only the package version moves to 0.7.5, because the release tag must match it. Apps do not change.

Highlight

compose.sh now pulls the provider components from the new OCI names (ghcr.io/sideeffffect/dapr-wasm-components/<module>). In 0.7.4 it still pulled the old flat dapr-wasm-components-<module> names, which are deleted from ghcr. So compose.sh from any tag up to v0.7.4 failed. Use compose.sh from v0.7.5.
