Add mcp-name ownership marker for MCP Registry publishing; bump to 1.2.1

The registry's PyPI ownership check requires 'mcp-name: io.github.sitbon/magg'
to appear in the package README as published on PyPI - the 1.2.0 publish
attempt failed on this. Add the marker to readme.md and document the
requirement in docs/mcp-registry.md.

Bump to 1.2.1 since PyPI descriptions are immutable per release - the
marker only takes effect with a new release.
