Update pnpm version in the monorepo

pnpm 9 is not actively maintained, and pnpm 10 has the same lockfile structure

I think we've had issues trying to upgrade pnpm in the past. Is that correct @atilafassina

true. Bad wording. What I meant to say is that (afaik!) v9 won't get new features. My take on that post is that it will still receive security patches and bugfixes though.

We did at some point, but @/birkskyum fixed them and now we're on v10 - this issue should be closed already.
