chore: bump examples

Bump all examples to the 1.1.0 release of start that uses vite 6. No more overrides

I went through all of them and checked that they worked.

We could use a new release of the mediakit package for authjs, but it appear to work as expected with start 1.1.0 (tested in an app i have that use it)
