fix(build): fetch only the submodules the build compiles

`git submodule update --init --recursive` dragged in the entire libopenssl/
openssl tree (boringssl, krb5, pyca-cryptography, wycheproof) plus a dozen
unused codecs — gigabytes of clone, and the deep .git/modules nesting then
broke the metadata cleanup ("rm: cannot remove .../.git/modules/libopenssl:
Directory not empty").

We link the SYSTEM OpenSSL, so init only what binding.gyp actually compiles:
crosstools, dmap-parser, libmdns (+ mdnssd/mdnssvc) and libcodecs' alac codec.
curve25519 and the Windows-only libpthreads4w aren't needed. Also make the
.git cleanup best-effort so a stray failure can't abort the install.

Validated locally: all binding.gyp sources present, clean tree ~209M.
