Restore missing y-prosemirror catalog entry

Re-add the y-prosemirror entry under catalogs.default; this commit removes that pin even though workspace importers still use specifier: 'catalog:' for y-prosemirror (e.g. packages/super-editor and packages/superdoc sections in the same lockfile). That leaves the lockfile internally inconsistent and can cause lockfile drift/frozen-lockfile friction when pnpm validates or regenerates catalog metadata.
