Prepare v1.0.0-beta.11 prerelease

Prepare and publish Switchify PC v1.0.0-beta.11 after authenticated device last-connection tracking landed on main.

Acceptance criteria:

• update every established shipping version field to 1.0.0-beta.11
• preserve application identity, updater configuration, protocol, and persisted schemas
• pass the full Node 24 and Rust 1.97.1 validation matrix
• complete independent latest-head review and required packaging CI
• merge under the user''s explicit release instruction
• create tag v1.0.0-beta.11 from the main merge commit and publish the signed prerelease
• verify the Windows and macOS assets, signatures, checksums, and updater feed
