ui: polish starter dashboard

Summary

• restyle dashboard panels with rounded cards, roomier padding, and theme-neutral focus treatments
• replace the default metrics gauge with compact text bars and an ASCII fallback via HUD_ASCII_BARS
• align starter config and README screenshot with the real starter dashboard
