[Accessibility]: Poor visibility of navbar links and logo

The navbar links (Home, Settings, Enrolled Courses) and the main "LearnHub" logo have poor color contrast against the background in both light and dark modes. In dark mode, the logo is nearly invisible. This negatively impacts readability and accessibility.

Suggested Fix:-

• Update CSS text color variables for the navbar items and logo to ensure high contrast.
• Add a distinct hover state for the links.

Just a small request: please make sure the PR includes at least 25+ lines of meaningful changes, not just a simple color update. You can also improve related accessibility aspects like hover/focus states, active states, or color variables if needed.

Also, when you open the PR, please attach before and after screenshots so the changes are easier to review.
