Run iOS CI only from ios branches

The iOS workflow ran on every push to main and every PR that touched
web/server (its integration tests run against the server), so routine web
changes rebuilt the native app and reported its known Swift failures.
iOS work happens on ios branches now: the workflow runs on pushes to ios
or ios/*, or by hand from the Actions tab.
