Make vitest-vscode work with Vite+ environments

This should fix it on the extension side: vitest-dev/vscode#740 (I validated in a basic monorepo project created by vp create)

It has some checks for versions and the name, so redirecting a binary won't work without changes in the extension.

I am planning to switch to a binary approach at one point, actually, because right now the extension just runs the node process while the IDE is open which is quite resource-heavy.
