fix: use v* tag pattern in Deduce tags to avoid latest collision

git describe --exact-match --tags returns whichever tag it finds
first. When a 'latest' release tag exists on the same commit as
v0.1.0, it returned 'latest' and the version tag was never used.

Switch to git tag -l 'v*' --points-at HEAD to find only version
tags. Also remove the gh release view latest sanity check from
the deploy script since it's not needed.
