just went ahead and looked this up in case there was a doubt that this wasn't just something you could just do with e:color()

these functions are meant to return the colors players set as their playermodels/physgun color, which normally can't be returned from an entity.

only question is, why tho?

edit: could be interesting if you could make an e2 that rainbowifies your playermodel color using SetPlayerColor, but: should only apply to the owner, and wiremod remembers what your old color was before making any changes, so it can set it back when you disconnect

though that might be an issue if a player ends up crashing without being able to get their color set right

earlier point still stands. it's cosmetic only, it doesn't serve any engineering purpose. it's just a toy function.
