Probe channel layouts for modern INT profiles

This release refines the modern Inkbird INT model profiles by separating physical probes from expected temperature channels.

Highlights:

  • Adds explicit probe/channel layout metadata for INT-14S-BW, INT-12E-BW, INT-31-BW, INT-33-BW and INT-11S-B.
  • Keeps INT-14-BW as the tested baseline with 4 physical probes and 8 live mapped channels.
  • Keeps cataloged multi-sensor models read-only/non-live until real hardware payloads are validated.
  • Prevents cataloged profiles from creating fake/unknown temperature entities.
  • Blocks writes and live transports on non-validated profiles.
  • Updates README, docs, wiki and validation templates to ask for physical probes, temperature channels and channel-mapping tests.

Important:

Knowing the expected probe layout does not mean the live payload is decoded yet.
For cataloged profiles, real hardware reports are still required before enabling BLE/LAN/cloud live support or writes.
