Go 1.26

• Runtime, CI workflow, and Docker base images upgraded from Go 1.25 to 1.26
• golangci-lint bumped to v2.9.0 for compatibility

Build Improvements

• AppVersion is now a single ldflags-injected variable — health endpoint, logs, CLI help, and --version all report the same value
• Removed redundant serve.Version variable
• Removed unused Codecov integration from CI
