Adjust outdated information on the docs

When removing the "fcpx" and "hls" adapters from the "opentimelineio-plugins" package we forgot to remove them from the "batteries included" section of the docs.

We also need to update the list of supported vfx reference platform years python version in the repo root Readme file. (Not the badges)
