Revert toolchains to 0.1.0 (broken 0.2.0 build)

Version 0.2.0 was bumped on main in 4c0ede6 but never had working
bottles published — every test-bot run since has failed at ncurses
during the cross-toolchain build, so users tapping
MaterializeInc/crosstools fall through to a source build that also
fails. Roll the formula state back to the last commit with working
0.1.0 bottles (4c0ede6^) so users get the published bottles again.

Keeps the post-bump workflow improvements (macos-13 → macos-14-large,
libfdb_c formulas) intact; only the formula files, lib/toolchain.rb,
README, and patches/ are reverted.
