nixos/gotenberg: fix service config for chromium

I've noticed that some syscalls chromium needs were filtered, preventing chromium to run the conversion. Also MemoryDenyWriteExecute is needed for the JS sandbox. Removed the ProcSubset to avoid a warning. (Failed to read /proc/sys/fs/inotify/max_user_watches)

Previously trying to convert e.g. HTML to PDF failed with convert HTML to PDF: convert to PDF: process first start: start process: run exec allocator: context canceled.
