Add ClickHouse Cloud data warehouse source doc

Changes

Adds the source doc for the new ClickHouse Cloud data warehouse connector, implemented in PostHog/posthog#71233. Follows the canonical source-doc template with the shared snippets, <SourceParameters />, and <SourceTables /> (the source sets lists_tables_without_credentials so the table catalog renders). Slug matches the source's docsUrl (clickhouse-cloud), verified with audit_source_docs.

Should merge alongside (or after) the connector PR.
