docs: add Appstack data warehouse source documentation

Changes

Adds the data warehouse source doc for the new Appstack (appstack.tech) connector, following the canonical source-doc template (shared snippets, <SourceParameters />, <SourceTables />, alpha callout).

The connector itself ships in the main repo (sourceId: Appstack, docsUrl pointing at /docs/cdp/sources/appstack); the connection fields and supported-table catalog render from public_source_configs.

Why: the Appstack import source is being released (alpha) and its docsUrl needs a matching page so the in-app link and the sources listing don't 404.
