docs: add Watchmode data warehouse source

Changes

Adds the source doc for the new Watchmode data warehouse connector, which is being added in PostHog/posthog (see the linked PR once open: feat(data-warehouse): implement watchmode import source). Follows the canonical source-doc template: alpha callout, prerequisites, shared setup/sync-mode snippets, and the auto-rendered <SourceParameters /> and <SourceTables /> components. audit_source_docs passes for this source.
