docs: add Perigon data warehouse source

Changes

Adds the user-facing doc for the new Perigon data warehouse source, following the canonical source-doc template (<SourceParameters /> + <SourceTables />, shared snippets, alpha callout).

Why: the Perigon connector is landing in PostHog/posthog (see the linked PR there) with docsUrl pointing at /docs/cdp/sources/perigon, so this doc needs to exist to avoid a 404. Should merge alongside that PR.

The source lists its table catalog statically (lists_tables_without_credentials = True), so the Supported tables section renders from the API.
