docs(error-tracking): document android ndk native symbol upload

Documents Android NDK native crash symbolication, landing alongside:

• SDK: feat(errortracking): capture native ndk crashes from tombstones posthog-android#659 (tombstone-based native crash capture, errorTrackingConfig.captureNativeCrashes)
• Gradle plugin: feat(gradle-plugin): upload native debug symbols via symbol-sets upload posthog-android#660 (uploadPostHogNativeSymbols<Variant> via posthog-cli symbol-sets upload)

Specifically:

• Adds an optional "Upload native debug symbols (NDK)" step to the Android mappings page, covering the automatic gradle task, the explicit invocation for prebuilt-.so apps, and the raw CLI command.
• Fixes the literal unresolved version "$version" in the existing gradle plugin snippet (now a concrete version).
• Adds a posthog-cli symbol-sets upload row to the CLI command reference (only the bare symbol-sets row existed).

Draft until releases ship: the referenced versions (SDK 3.57.0, plugin 1.5.0) are the expected next minors from the changesets in the PRs above and must be confirmed against the actual releases before merging.
