This PR updates the build infrastructure to also support macOS arm64 builds using pre-made (in CI) artifacts when no local installation is found, just as x86_64 based macOS and linux builds have been doing. For this the scripts were updated to include an 'architecture' field in the filename (as they now provided).
This has been tested in CI for x86_64 and manually on a macOS arm64 box while we await CI provisioning for this hardware.
