Follow-up to #66832.

This PR fixes issues in breeze build-docs related tests on chart 1-2x branch line (failure example - https://github.com/apache/airflow/actions/runs/25968650290/job/76338430827).


  • Fix: Prevent Breeze crash when self-upgrade check fails

  • test: add unit tests for Breeze self-upgrade check

  • style: rename test file and update breeze images (cherry picked from commit 9aa4dfb)
