docs: update README with current make targets - #33

Replace stale make setup/up references with actual targets (dev, prod, stop, restart, logs, check, fmt, deploy, down). Remove Tailscale sidecar references since that was removed in the Makefile simplification. Co-Authored-By: Claude Opus 4.6 (1M context) <noreply@anthropic.com>
